Still time left to fry!

There’s no getting away from it: Chanukah is about oil, and oil is not the healthiest – or lowest in fat – of foods. But who could say no to latkes? They’re as much a part of Chanukah as colorful candles and Maoz Tsur. A few years ago we came up with a colorful and healthful approach to the dilemma: Veggie fritters. Who said latkes must be potato-based only? We experimented with a rainbow spectrum of vegetables.

BEETS & CARROTS

SWEET POTATOES

LEEKS

SAMOSA (PEAS & POTATOES)

None of these are healthy per se (and the last recipe is potato based, dotted with green) in that they’re all fried, but they satisfy the latke urge while also fulfilling your daily veg dose.

Happy frying! And happy Chanukah!

PS These are also great for any evening meal.
